This hearty chicken soup is a family favorite in our household, especially in the colder winter months.
Passed down from my mother, this chicken curry soup is the perfect recipe for a cozy, delicious meal — with a bit of a twist.
My husband dubbed it “super soup” after tasting it for the first time and the name just stuck – it truly is just that — super in every way.

Curried Butternut, Chicken and Apple Soup, aka “Super Soup” 💫
- 4 cups cooked pureed butternut squash
- 3-4 cups cooked diced chicken
- 8 cups chicken broth
- 2 TBSP olive oil
- 1 onion diced
- 2 sweet potatoes cut into bite size chunks (you can use also white potato or one of each)
- 3-4 cloves minced garlic
- 4 large apples peeled and chopped
- 1+ TBSP curry powder
- 2 tsp. salt and pepper
In a large soup pot sauté onion and garlic in oil. Add diced potatoes and broth. Heat to boiling and simmer until the potatoes are soft. Add squash, chicken, apples and seasoning. Continue to cook on low until thickened, approx. 45 minutes – 1 hour.
Enjoy with a piece of your favorite crusty bread.
🌟 An extra note: It may be helpful to buy 2 bags of already peeled butternut squash at the grocery store and cook them the night before making the soup.
